What do you think, do vegans eat only grass? I hope that the topic of veganism is no longer so alien to other people, and such a statement is already an archetype. Plant-based food can be really varied, tasty and healthy. The photo shows spring rolls with vegan mozzarella, which I made myself at home. The kids loved it. I encourage you to prepare your own meals, the more the better. If you have to buy already prepared food, always read the ingredients carefully. This should become a habit.
I am aware of my choices. I know that my children build their bodies and immunity from what they eat. Remember that all of it comes from the gut - if you don't take care of it, your body will not thank you with health and strength. Ingredients for vegan mozzarella:
Step 1 - 1 cup cashews (soaked overnight in water) - 1 cup vegan yoghurt (preferably also made from cashews) - Salt to taste (about a teaspoon) - half a cup of water - 3 tablespoons tapioca
How do I make it?
Blend all ingredients to a smooth paste and put into a clean jar (clean it with boiling water), cover with a cloth and leave for 24 hours (a slight fermentation should start).
Step 2 - half a glass of water - 1-2 tablespoons agar-agar - pot to boil the mixture
How do I make it?
Mix ingredients from Step 2 and bring to a boil in a pot (remember to stir all the time). Cook over low heat until everything is thoroughly dissolved.
Step 3 Pour the mixture from step 1 into the agar-agar water from step 2, stirring all the time. Keep stirring (it takes a short while) until everything comes together nicely and forms a thick mass.
Step 4 - Bowl of cold water - ice cubes
Prepare a bowl with ice-cold water (you can pour cold water and add lots of ice cubes)
Step 5 Scoop balls with an ice-cream scoop and place each in a bowl of ice water.
When you're done, take all the balls out and place them into a separate bowl.
Congratulations, you're done!
You can eat it however you like it. We love it in spring rolls, in the company of many fresh vegetables :)
